Vegan Burger

With the increased interest in a vegan lifestyle there are many every day chain
restaurants who have added vegan burgers to their menu; we even found a 100%
vegan burger restaurant http://boonburger.ca who has several Ontario locations.


Not every place considers that vegans want their burgers cooked on a dedicated vegan grill with vegan kitchen tools though. So I love that I can make the best vegan burger I've ever tasted in the comfort of my own home.


I have tweaked this burger over a few years, since finding a recipe from Kathy Patalsky, and with the help of Mito Foods “Ready to Serve Tempura” have arrived at perfection! This Tempura was in the December Box but I was holding off trying it since December also had a solid 2 weeks of over indulging in lots of other yummy foods.

Burger
3 large sweet potatoes
1 can of white kidney beans
1/4 C Nutritional Yeast Flakes
1/4 C Brown Rice Flour
1/2 C Ground Walnuts
1/4 C Chipotle-Mango Seasoning
1-2 tsp Cayenne Pepper
Tempura for coating burger
Olive Oil for frying


For Your Bun
Thinly sliced red onions
Lettuce of choice - I use Romaine
Dijon mustard
Avocado (Sometimes I blend the dijon/avocado together)


Preheat oven 450°F


1. Roast whole sweet potatoes on a cookie sheet for 45 minutes and set aside to cool.
2. In a large bowl place rinsed white kidney beans and mash with fork or get your hands dirty and squeeze them into a rough mash.
3. When sweet potatoes have cooled enough to handle, remove skins and add to bowl and mash with fork.
4. Add remaining ingredients - you can add less or more; tasting along the way for your own personal pleasure.
5. With a 1/3 measuring cup, scoop burger mixture and form into a patty. I use thin
buns and make the burger approximately the same size. (I have found that 1/3C of
burger mix works well to get a good fry on outside and about 5-6 minutes in oven at 350°F to finish.)
6. In a frying pan on med/high heat, add olive and gently place your burger patties and cook approximately 3-4 minutes per side. Be careful of the hot oil when you turn the patties. Safety always!
7. Place patties on cookie sheet, or cake pan, and bake 5-6 minutes at 350°F.
8. While patties are in oven, toast your buns and prepare them with all the extras; you can make this your own burger by trying anything you like on it!
9. Enjoy with with home made fries or even just a handful of potato chips! I always make enough to have these for a few days so you could cut the recipe in half if you like. But you will wish you hadn’t!
