Carrot Cake Energy Bites

The last time I had carrot cake was at a wedding last fall.

I’ve never been a huge fan of things made with cinnamon until recently. I never thought i’d ever order a chai latte in my life.  It’s funny how our tastes change with time. Now, I can say that when carrot and cinnamon are combined together properly, they can make the most delicious sweet treats. Who doesn’t love a homemade carrot cake, especially when the icing is thick, made with love and isn’t too sweet. However, we can’t be reaching for a slice of this every time we’re in the mood for some carrot cake or else we’d have some serious problems.

Which is why i’m showing you a healthy version that will leave you satisfied (try mixing it with some plain greek yogourt and a dash of honey), and that comes in the most user-friendly format: energy bites.

Now, I don’t know about you, but I have never tried incorporating the pulp of a fruit before in any of my cooking. I heard it was worth a try. So I spent the afternoon making a yummy apple, ginger and carrot juice and keeping the carrot pulp for these babies. Way to make use of all your ingredients!

If you don’t have a juicer, I suggest you grate your carrots very finely and try that out. Its should be just as good.

Ingredients:

  • 1 tbsp flax meal
  • 1/2 cup chopped dates
  • 1/4 cup carrot pulp
  • 2 tbsp honey
  • 1/2 tsp cinnamon
  • Pinch of ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • Pinch of sea salt
  • 1/2 cup coconut shreds
  • 1/2 cup oats

Directions:

  1. In food processor mix flax, dates, carrot, honey and spices. Pulse until combined.
  2. Transfer to large bowl and add oats and coconut. Mix with hands to combine all ingredients. Cover and let refrigerate for 1 hour.
  3. Roll with hand into small bites. Store in airtight container in fridge until ready to eat.
